1kg of cooked chard, drained
1 piece of bacon
1 piece of brisket
2 medium onions
3 cloves of garlic
parsley, a bouquet garni
Remove fat and skin from the stomach.
Finely chop the chard, bacon and breast.
Add the chopped onion, garlic and parsley.
Mix well and stuff the stomach with it.
To prevent the casing from bursting, wrap it in a nylon stocking or cloth.
Cook for about 3 to 4 hours in a court-bouillon with the bouquet garni.
Brush frequently with the cooking broth.
The maôche can be eaten hot or cold or roasted in an oiled pan, in slices.
Daily 9am to 12pm and 1pm to 8pm.

The history of our campsite.
Les Truffières campsite has a rich history, having been created in 1961. It is managed by Valérie and Stéphane Soulier and offers quality outdoor accommodation, including mobile homes, camper van sites and caravan and tent sites, all year round. The campsite also offers a bar, a gourmet restaurant and heated sanitary facilities for added comfort. It is listed in the Ardèche Découverte tourist guide.
